Valquíria Ros-Polski

Department of Food Technology-Food Engineering Faculty
UNICAMP – State University of Campinas, SP-Brazil

will give a seminar on:

Microwave-assisted (MAP) thermal processing of fluid foods.
Abstract: Food processing enables the products to be available for consumers around the world independently of seasonal changes. Some thermal processes of food make it possible to produce microbiological safe products with higher quality. In order to obtain the desired safety and quality levels it is important to study the product characteristics, process conditions and their interactions. As compared to conventional methods, new technologies, like microwave heating, have also been applied to food thermal processing. This presentation will deal with the aspects cited above related to microwave assisted thermal processing of fluid foods. She will discuss the idea of her PhD thesis project, the experiments done and the experience at ƽÌØÎå²»ÖÐ University.

Valquiria Ros Polski was born in Brazil (Guarulhos – SP) and did her undergraduate studies in Food Engineering at UNICAMP (State University of Campinas) in São Paulo state from 2001 to 2005. Presently she is a PhD graduate student in Food Engineering at the same University. The research project is developed at ITAL (Food Research Institute) in Campinas – SP, where she has been working as a research trainee since 2001. Valquiria spent the past 7 months at Department of Bioresource Engineering, ƽÌØÎå²»ÖÐ as a Graduate Research Trainee working on microwave thermal processing under the supervision of Dr. Vijaya Raghavan.
